Originally employed solely as a pollinator to boost the fertility of other plants, an early harvest and processing–conducted a few weeks ahead of schedule–unveiled an exceptionally flavourful extra virgin olive oil abundant in polyphenols.

Sensory evaluation

Monovarietal oil produced exclusively from a single olive variety.

Moderate to intense fruity profile with notes of green olive, leaves, aromatic herbs, and unripe fruit. On the palate, it delivers distinctly tart and fresh flavours with moderate to intense bitterness and lingering intense spiciness. It boasts a unique aromatic profile.

Morchiaio received the designation of "Slow Food Presidium" in 2023.

Harvest

Manual harvesting took place between October and early November 2023, during the initial stages of ripening, in order to maximize both aromatic and phenolic content.

Milling

At our company's mill, we employ a continuous cold extraction process, using equipment with reduced oxidative impact. Olives are processed within one hour of harvesting and immediately undergo filtration.

Storage

Storage occurs naturally under inert gas (Argon) within stainless steel silos, maintained in a temperature-controlled environment of 18°C.
