Tenuta Maryamado’s Pasta: five shapes, endless pairings
At Tenuta Maryamado, we rotate our production of ancient grains and organic wheat every year to create a variety of artisanal pastas and other products.
Depending on atmospheric conditions and soil type, the wheat produces different semolina, which affects the pasta-making process, cooking time, gluten tenacity, and the amount of starch released in the pot.
Our pasta require slightly different cooking times depending on the amount used. The quality of our artisanal Italian pasta – made with 100% Senatore Cappelli durum wheat – is evident in its unique form and colour. Our shop offers five different forms that can be paired with countless dishes.
Whole wheat Linguine with Shrimp and Pistachios
Indulge in the rich flavours of whole wheat linguine made from 100% ancient Senatore Cappelli wheat, hailing from Tuscany. Its cooking time may vary slightly based on the amount used, but generally takes about 10 minutes. Pair this wholesome pasta with delectable seafood, such as succulent shrimp and pistachios topped with grated lemon zest. Enjoy this culinary delight with a glass of crisp white wine that accentuates the flavours. Perfect for a fancy dinner with friends, this dish is sure to impress.
Pecorino Cheese, Black Pepper, and Walnut Gnocchi
Savour the delectable flavours of gnocchi, a semolina pasta made with 100% ancient Senatore Cappelli wheat and extruded with bronze dyes for a rough surface to absorb the sauce.This pasta is best enjoyed when paired with savoury ingredients such as pecorino cheese, black pepper, and walnuts. This tempting and delectable first course is perfect for any occasion.
Mezze Penne Rigate with Cauliflower, Black Olives, and Spicy Chili
Our mezze penne rigate – a type of semolina pasta made entirely from ancient Senatore Cappelli wheat originating from Tuscany – has a cooking time of just seven minutes. For a perfect vegan dish, combine the pasta with cauliflower, black olives, and spicy chilli. This blend of flavours is sure to impress, especially when paired with a fresh and lively Pinot Bianco. It is a light but delicious first course, perfect for those who love delicate flavours with a touch of spice.
Dischi Volanti with potato, saffron, and smoked bacon cream
The Flying Saucers are a type of semolina pasta, made with 100% ancient Senatore Cappelli wheat (Tuscan Origin). They feature a unique shape and cut, ideal for absorbing sauces and condiments, ensuring an authentic and delightful culinary experience. This pasta pairs perfectly with a cream of potatoes, saffron, and smoked bacon, a recipe that combines taste and sophistication. A touch of elegance to further enrich the dish is represented by a sprig of rosemary. A perfect single dish for a tasty dinner with friends.
Stracci Toscani with cabbage cream and pumpkin chips
Tuscan rags are a semolina pasta made with 100% ancient organic Senatore Cappelli wheat (of Tuscan origin). They have a rough surface, obtained thanks to bronze extrusion. This pasta pairs perfectly with a cabbage cream, a simple, tasty, and healthy dish, also suitable for vegetarians. For a final touch of class, you can add oven-baked pumpkin chips to decorate the dish.
