Sensory evaluation

Monovarietal oil produced exclusively from a single olive variety.

Light to moderate fruity profile with a subtle hint of cypress. On the palate, initial sweet notes of bitter almond, followed by distinctive herbaceous sensations of artichoke and green leaves.

"Grande Olio" featured in Slow Food's "Guida agli Extra Vergini" for 2022.

Harvest

Manual harvesting took place between October and early November 2023, during the initial stages of ripening, in order to maximize both aromatic and phenolic content.

Milling

At our company's mill, we employ a continuous cold extraction process, using equipment with reduced oxidative impact. Olives are processed within one hour of harvesting and immediately undergo filtration.

Storage

Storage occurs naturally under inert gas (Argon) within stainless steel silos, maintained in a temperature-controlled environment of 18°C.
